Cinnamon Swirl:

1 tbsp. butter (melted)

¼ cup brown sugar

1 tsp cinnamon

Frosting:

4 ounces full-fat cream cheese (softened)

¼ cup butter (softened)

½ tsp vanilla essence

2 cups confectioner’s sugar

Milk

Cinnamon (to serve)

Directions:

1. Preheat the main oven to 350 degrees F. Line an 8” square baking pan with aluminum foil.

2. To prepare the blondies: In a large mixing bowl, cream the melted butter with the brown sugar. Add the egg and vanilla essence and mix well until incorporated.

3. Add the salt followed by the flour and mix until silky smooth.

4. Evenly spread the mixture into the baking pan.

5. Next, make the filling: In a second bowl, combine the butter, along with the brown sugar and cinnamon. With a spoon drop dollops of the filling mixture over the surface of the blondie batter and with a blunt kitchen knife, gently swirl.

6. Bake in the oven for between 20-25 minutes.

7. Finally, make the frosting. In a medium-sized mixing bowl, combine the cream cheese with the butter, vanilla essence and confectioner’s sugar. As soon as the ingredients are fully combined, whip until fluffy. Add a dash of milk to soften if necessary.

8. As soon as the blondies are sufficiently cool, frost and sprinkle with cinnamon.
